KNUCKLE

Pork knuckle refers to the front or back elbows of the pig's body. In this particular part the meat fiber is relatively soft, the connective tissue is less while the muscle tissue contains more intermuscular fat.  As a result, knuckle tastes particularly delicious after cooking.
